Went to a party yesterday, and I tried the best salsa ever. It was not spicy at all, and as soon as I put a bite of it in my mouth, the lime, cilantro, the poblano peppers and tomato all exploded in my mouth at once. I asked a friend where she got the recipe, I have never known her to be so creative in the kitchen. She laughed and said it was a family secret, but then she laughed and then told me she bought it at Giant, and it was the Giant brand of their fresh salsa.



YUM. I can taste this on taco's, crackers, quesidilla's and anything else I can get my hands on!

I have once again over obligated myself

I have this really bad habit of saying, "Sure, I don't mind doing that". Of course what I fail to realize is that I am not super woman, and I do only have 24 hours in one day just like every one else. Obviously by the title you can tell that I am not talking about bacon today, nor am I talking about planting or photography so if you are a normal male you might want to move on. I am on the phone now, on hold with my doctor's office. They have not called me to tell me everything that is going to happen and to tell me that I am being over cautious and extremely difficult right now. I am waiting for them to tell me what to expect and why the hell I am going to be off work for 6 weeks. I don't quite understand the entire process and since I am paying for it, I should be getting color by number steps of exactly what they are going to do. I am not difficult in any means. i just want to request that someone hold my hand through the entire procedure and whisper sweet nothings in my ear and watch for tears coming out of my eyes in case I am still awake during the procedure. Yes, I know I watch too much television, but hey at least if it does happen I know exactly what to do right? So

Nachos

I made lunch for me today. Everyone was gone so I checked out my favorite food website ( ThePioneerWoman ). I decided on the Nachos since I could tweak it with the stuff that I had, and I really wanted some carbs. I cooked up some ground hamburger, added some taco sauce, and you can use enchilada sauce if you want, but I wanted to stay as mild as possible but with a hint of flavor. I also cooked a can of pinto beans. While that was simmering I chopped up some tomato, avocado, and shredded some Monterey Jack cheese and added a bit of cheddar to the mix. Then I took some tortilla chips laid them down in a pie plate, covered them with beans and the meat, added some cheese, and a few tomato's then I repeated, omitting the tomato's this time. I then put it in the broiler for a few minutes and it looked awesome I then took a generous helping, and added some fresh tomato's and avocado, added some sour cream and I ATE. It. ALL. UP.
