Well, maybe not, since I love BACON so much!

Can you believe that I did not eat a strip of bacon during the holidays?? I am sure that the stocks went down because of that, of some pig got to live a few more days because of my decision.
It really wasn't a decision not to eat bacon, I just couldn't stuff any more food in my mouth. 

I should have cooked some bacon since I needed 2 tablespoons of bacon grease (clogged artery syrup) for the sausage gravy.  I used real butter instead.

Not that that is any better..
And I wonder why when I wave, I wave back to myself...

My New Years resolution??? Not to cook any Pioneer Woman recipes until March.

I can't seriously do that though...
The Roast is the bomb...
The stuffed mushrooms are butter in your mouth..
The cinnamon rolls can seriously pay your way into heaven...

No she does not pay me to say these things, but she could.  If she did I might add that every thing that she cooks has either onions or butter in it.  I love her.  Even Julia Childs says butter is a food group.

So there...

I have once again over obligated myself

I have this really bad habit of saying, "Sure, I don't mind doing that". Of course what I fail to realize is that I am not super woman, and I do only have 24 hours in one day just like every one else. There is no reason for me to "one up" everyone else or prove that I can do everything on my list for the nest week: 1. Hello Uterus!

Obviously by the title you can tell that I am not talking about bacon today, nor am I talking about planting or photography so if you are a normal male you might want to move on. I am on the phone now, on hold with my doctor's office. They have not called me to tell me everything that is going to happen and to tell me that I am being over cautious and extremely difficult right now. I am waiting for them to tell me what to expect and why the hell I am going to be off work for 6 weeks. I don't quite understand the entire process and since I am paying for it, I should be getting color by number steps of exactly what they are going to do. I am not difficult in any means. i just want to request that someone hold my hand through the entire procedure and whisper sweet nothings in my ear and watch for tears coming out of my eyes in case I am still awake during the procedure. Yes, I know I watch too much television, but hey at least if it does happen I know exactly what to do right? So

Nachos

I made lunch for me today. Everyone was gone so I checked out my favorite food website ( ThePioneerWoman ). I decided on the Nachos since I could tweak it with the stuff that I had, and I really wanted some carbs. I cooked up some ground hamburger, added some taco sauce, and you can use enchilada sauce if you want, but I wanted to stay as mild as possible but with a hint of flavor. I also cooked a can of pinto beans. While that was simmering I chopped up some tomato, avocado, and shredded some Monterey Jack cheese and added a bit of cheddar to the mix. Then I took some tortilla chips laid them down in a pie plate, covered them with beans and the meat, added some cheese, and a few tomato's then I repeated, omitting the tomato's this time. I then put it in the broiler for a few minutes and it looked awesome I then took a generous helping, and added some fresh tomato's and avocado, added some sour cream and I ATE. It. ALL. UP.
